INTRODUCING OROSHI FOOD GRATER
Kikusumi OROSHI FOOD GRATER range of handcrafted copper ware is made in Sakai, Japan. Crafted one by one from a thin copper sheet that is hand hammered to add strength to the metal before it is hand cut into shape. The copper is then brushed with hot, liquid tin. Once cooled and set the artisan sets about punching the grater with a special tool that results in rows of raised teeth. This artisan technique dates back to the Edo period and yields superior grating results. Top level Japanese chefs know that hand crafted oroshi graters perform better than the polished machine made copies. The uneven rows of teeth grate ingredients in a way so juices are not separated like they are with machine made copies.
DESIGN
The OROSHI FOOD GRATER range is a collaboration between a traditional oroshi craftsman and contemporary designer Del Cook. Each grater is equally suited for both professionals and home cooks. Graters are paired with a ceramic and stainless steel scraper for “raking” grated ingredients off of the OROSHI GRATER.

HOW TO USE OROSHI
Designed with fine teeth on one side and coarse on the other. The unique shape and intelligently placed rows of teeth makes the grater ideal for grating ginger as the teeth crush the root to release more flavor and juice while catching tough fibers. The teeth grate on all sides, so for best results grate ingredients in a circular motion.
1) The copper kitchen grater is 2 sided (Fine + Coarse) and can be used to zest citrus or grate ginger, daikon, radish, wasabi, horseradish, carrot, potato and many other vegetables. Just grate each ingredient in a circular motion.
2) Once zested/grated use the scraper to “rake” the ingredient off of the grater with the stainless steel grater. For best results when zesting move the vegetable in a circular motion against the surface of the grater. Once zested/grated use the scraper to “rake” the zest off of the grater.
3) Use for garnishes for raw foods, adding fresh flavors to your salads, in smoothies, soups, sauces & hot or cold drinks. If you want to add more flavor in a healthy way the Oroshi grater is the kitchen tool you need to have!
WHAT TO USE OROSHI FOR
Ideal for grating ginger, garlic, carrot, apple, daikon, citrus rinds, potato, wasabi and horseradish. Once grated scrape the ingredient into soups, sauces, smoothies, marinades, hot drinks or cocktails.
