SANTOKU
NATUR Santoku is a versatile cutting tool capable of handling most basic kitchen cutting tasks. Santoku means “three virtues” in Japanese and is capable of slicing, dicing and mincing. Fit with a blade shape shorter in length but wider than a Western chef knife – the strength of the Santoku is its light weight and easy maneuverability. Professional chefs will choose a santoku blade to handle both detailed and greater volumes of prepping to improves work efficiency.
PETTY
Larger than a paring knife yet smaller most other knives, the NATUR Petty is ideal for small to medium-sized cutting tasks. Its blade length and pointed tip make it skilled at sectioning citrus fruits and stemming vegetables. Its octagonal handle fits comfortably in the hand allowing it to excel at peeling root vegetables and fruit. Ideal knuckle clearance makes the NATUR Petty great for chopping or slicing fine herbs on a cutting board using a straight forward motion. The NATUR Petty knife blade is ultra-thin which allows it to excel at jobs that require agility and precision such as stemming and seeding peppers, thinly slicing garlic, or cutting shallots into tiny dice.

JAPANESE FORGING
At Kikusumi we work with only the best forgers and artisans and the NATUR series represents this well. The quality of a knife depends not only on the type of steel but also the quality of the forging. Blades forged 100% in Tosa, Japan offers a superior blend of tradition and modern knife making than those made elsewhere.
DAMASCUS HAMMERED STEEL
Each stainless steel knife blade has a core of premium AUS10 steel with 45 layers of Damascus steel folded over top. The mark of the craftsmen is left one by one as the blades are finished with a unique hammered finish called tsuchime. The hammered finish also helps food to release from the blade while cutting. High polish damascus steel blades are laser thin for precise cutting. Easy to clean stainless steel without the high maintenance rust issues of traditional carbon blades.
KASHI JAPANESE OAK HANDLE
Kashi / Japanese oak tree is evergreen. In early summer, it flowers in a similar way to chestnut. In Autumn blooms become small acorns. Japanese oak has a structure that is uniformly hard, has excellent dent resistance and has better impact strength than American oaks. Kashi is often found in the Kanto area (Tokyo) In Budo it’s usually use to make wooden weapons such as Bokken. Since it is heavy and very resilient, it’s one of the most favored woods to use. Japanese oak was the favorite wood of famous sword masters throughout Japanese history, because of its practicality and high durability.
ERGONOMIC HANDLE
Octagonal wa handles are ideal for both left and right hand cooks. They mirror the contours of the hand which is why they have superior ergonomics. Flexible grip holds are another reason – whether straight cuts or peeling ‘katsura’ cutting the octagonal handle beats the western grip handles on skill performance. HAND ENGRAVING DETAILS
Meticulous details include a beautiful yakkin branding of the Kikusumi logo on the end of the handle just as was done in the EDO period. On either side of the blade are hand-engraved names of the KATURA series name, Kikusumi logo and its origin in Seki Japan in kanji. These are some of our highest rated knives from our customers.
